Heath Simpson is leading the NSCAD University contingent for Dine By Design East.

Interdisciplinary artist Heath Simpson is curating NSCAD University’s dining room display at Dine By Design East. Heath graduated in May with a double major in photography and fine arts. Other members of the NSCAD team include: Sandra Alfoldy, professor of art history; Marlene Ivey, professor of design; Linda Hutchison, director of university relations; and Marilyn Smulders, director of communications.

In partnership with Gio, the NSCAD team aims to challenge traditional dining experiences by exploring forms of expression in food, art, craft and design. The starting point for their dining space is a collection of eight ceramic place settings by eight NSCAD alumni, a treasured part of the university’s collection.

Here’s a sample of some of the wonderful handcrafted pottery that will be featured in their dining room. The green cup and saucer set is by Joan Bruneau, a 1988 NSCAD alumnus and also a part-time faculty member. Her studio, Nova Terra Cotta, is located in Lunenburg.

In keeping with the theme, chef David Woodley of Gio will be creating dishes that are sweet, savoury, solid, liquid and gas. David started his culinary career as a dish steward at the age of 17. Having worked under the guidance of chefs like Kyle McNeil, Jeff House and Bryan Corkery, he has developed his culinary skill and passion for cooking.

As sous chef to Chef Bee Choo Char, David has been the lead with the menu development and quality of product served in Gio and the Prince George Hotel for the last few years. I can’t wait to sample his recipes for Dine By Design East!
