Though they are tight-lipped about their Dine By Design East room (they’ve titled it “Dining in the Raw”), Melissa and Keri are planning a unique space that features local produce. “Our design focuses on the farm and a simpler time when the emphasis was on community, craft and a reconnection with our roots,” they say. “Using only what we need a re-purposing what is leftover cultivates a strong social message.”
With that in mind, Melissa and Keri are matched with chef/owner Ludovic Eveno of the Agricola Street Brasserie in Halifax’s North End. Born and raised in a small village in rural France, chef Ludo completed his culinary training in Alsace. He travelled extensively for the next 15 years, working in France, England, Eastern Canada, New York City and Portland, Oregon. He has lived in Halifax for the past nine years where he loves combining his French culinary techniques with local, farm-fresh ingredients.
I visited the Brasserie recently on a Local Tasting Tour—(the Open Kitchen Food Tour of the North End). I sampled some of chef Ludo’s house-made sausages—they were delicious. It was also fun seeing what Design360 did with the décor in the restaurant. I love the re-purposed pendant lights (made from the burned out deck tables at White Point Lodge, I’m told) and the whimsical bottles showcased at the bar. I can’t wait to see what these two teams come up with for the Dine By Design East gala on October 30!
