Janice Bates-Hawkins’ Dine By Design East space is inspired by an iconic garden.

Janice Bates-Hawkins is matched with Chef Ryan Reynolds of EDNA for Dine By Design East.

Janice Bates-Hawkins of Signature Design is back for Dine By Design East 2014, and this time around she’s creating a unique space inspired by an iconic garden. For more than 25 years,  she has specialized in kitchen and bath design, space and lifestyle planning, project management, renovation and new home construction from concept through completion.

For this year’s effort, Janice was inspired after a walk through Longwood Gardens in the countryside near Philadelphia. “It was established in the early 20th century and the garden is full of yews clipped by hand into geometric shapes and animal forms,” she says. “In topiary, lush greenery combines with structure and form for a magical result.”

Janice loves collaborating with local artisans and craftspeople for her projects, especially for Dine By Design East. Her final design will be revealed at tonight’s gala—I don’t want to reveal too much but I do know it features gorgeous hand-wraught iron gates by blacksmith Grant Haverstrock of Firehouse Iron Works in Cape Breton.

For tonight’s gala, Janice is teamed up with chef Robert Reynolds of EDNA, a bright and colourful eatery on Gottingen Street in Halifax’s North End owned by Jenna Mooers. A native of London, England Robert Reynolds is EDNA’s head chef and draws inspiration for his ever-changing menus from seasonal produce and local seafood. He sources about 90 per cent of items from local producers and he loves trying out new creations according to what’s fresh and seasonal. “We have the freedom to develop our own recipes here…this is a playful, fun job,” Reynolds said in a recent interview.

For his Dine By Design East menu, Chef Reynolds is planning a three-course meal highlighting local seafood. His first course will be a Cured Trout Tartare with cucumber, chives, crème fraiche and trout caviar. I can’t wait to try it out in person tonight!
