For the gala at Dine By Design East, Denise is matched with chef Tahir Salamat, executive chef of ONYX, a fun and fashionable resto bar on Argyle Street known for its globally influenced small-plates menu.
Called “Mother of Pearl,” Denise’s Dine By Design East space aims to capture the simplicity and elegance of an oyster. “As a designer, I believe you can create anything with the right inspiration,” she says. “If I could dine anywhere, it would be in an oyster.”
She says she loves design that combines formal with a splash of whimsy. “Dining should always be a shared, fun experience,” she says. “Everything always seems to taste better when it’s laid out on a nicely set table. And lighting is the cornerstone of ambiance and intimacy, so dimmable lighting and candles for a twinkle effect.”
Chef Tahir, recently voted Culinarian of the Year by the Nova Scotia Association of Chefs and Cooks, brings a unique global influence to his culinary style. “I’ve been all around the world, from Asia to Europe, the Far East and Africa,” he says. “I bring a lot of culture to my cooking.”
To complement Denise’s design, he is planning a menu of decadent recipes, including Oyster Rockefeller with Passion Fruit Pearls, and Chicken Chops, a delicious staple on the menu at ONYX.
