Alfajores
Alfajores are almost cake-like in texture and can be filled with either jam or dulce de leche (a buttery, toffee-like caramel spread).
Ingredients:
- 3 cups (390 g) all-purpose flour
- 2 tsp (10 ml) baking powder
- 1 tsp (5 ml) salt
- 3/4 cup (170 g) unsalted butter, room temperature
- 1 1/4 cups (250 g) granulated sugar
- 2 large eggs, room temperature
- 3/4 cup (175 ml) milk
- 1/4 cup (60 ml) freshly squeezed orange juice 2
- Tbsp (30 ml) orange zest
- 1 tsp (5 ml) pure vanilla extract
- store-bought dulce de leche or jam
Directions:
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In medium bowl, sift together flour, baking powder and salt.
- In the bowl of an electric mixer fitted with the paddle attachment, cream together butter, sugar and orange zest on medium speed until fluffy, 1 to 2 minutes.
- Add eggs, one at a time, and continue mixing until well combined, about 1 minute.
- Add in the flour mixture in small batches, mixing until well combined. Add milk, orange juice and vanilla, mixing until a dough forms.
- Drop dough onto baking sheets, at least 2 inches (5 cm) apart. Bake until golden, about 10 to 14 minutes. Cool cookies on wire rack.
- Sandwich cooled cookies together with dulce de leche or jam. Store in an airtight container for up to 2 days. Sprinkle lightly with icing sugar before serving.
