Alfajores

Alfajores are almost cake-like in texture and can be filled with either jam or dulce de leche (a buttery, toffee-like caramel spread).

Ingredients:

 
  • 3 cups (390 g) all-purpose flour
  • 2 tsp (10 ml) baking powder
  • 1 tsp (5 ml) salt
  • 3/4 cup (170 g) unsalted butter, room temperature
  • 1 1/4 cups (250 g) granulated sugar
  • 2 large eggs, room temperature
  • 3/4 cup (175 ml) milk
  • 1/4 cup (60 ml) freshly squeezed orange juice 2
  •  Tbsp (30 ml) orange zest
  • 1 tsp (5 ml) pure vanilla extract
  • store-bought dulce de leche or jam

Directions:

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In medium bowl, sift together flour, baking powder and salt.
  3. In the bowl of an electric mixer fitted with the paddle attachment, cream together butter, sugar and orange zest on medium speed until fluffy, 1 to 2 minutes.
  4. Add eggs, one at a time, and continue mixing until well combined, about 1 minute.
  5. Add in the flour mixture in small batches, mixing until well combined. Add milk, orange juice and vanilla, mixing until a dough forms.
  6. Drop dough onto baking sheets, at least 2 inches (5 cm) apart. Bake until golden, about 10 to 14 minutes. Cool cookies on wire rack.
  7. Sandwich cooled cookies together with dulce de leche or jam. Store in an airtight container for up to 2 days. Sprinkle lightly with icing sugar before serving.
