Cucumber raita

Raita can be flavoured with mango or pineapple. This cucumber version is cooling with a warm curry. Serves 2

Ingredients:

  • ½ unpeeled cucumber, grated coarsely
  • 2 cups (500 ml) plain yogurt
  • 1 tsp (5 ml) ground cumin
  • 1 tsp (5 ml) salt
  • ½ tsp (2.5 ml) sugar
  • ½ cup (125 ml) water

Directions:

  1. Whisk yogurt.
  2. Add the cucumber and toss to coat.
  3. Add water until desired consistency is achieved.
  4. Add cumin powder, salt, and sugar, and mix again.
  5. Store refrigerated.
