No-Cook Cranberry Relish

Be sure to chop everything coarsely so this colourful relish maintains its texture.

Ingredients:

  • 1 small orange
  • 1/2 lemon
  • 3 crisp apples
  • 3 cups (750 ml) or one
  • 12-oz/340-g package fresh cranberries
  • 1 1/2 cups (375 ml) sugar

Directions:

  1. Grate orange and lemon rind on large holes of a grater. Reserve.
  2. Quarter the remainder of the orange and lemon, removing any seeds. Quarter and core apples, leaving peel on.
  3. Chop orange, lemon, apples and cranberries coarsely in food processor or grinder.
  4. Stir in sugar and reserved strips of orange and lemon rind.
  5. Chill for at least 3 hours. Stir before serving. Store in refrigerator.
