Oven-Roasted Carrots in Brown-Sugar Glaze

A sprinkle of brown sugar brings out the delicious flavour in sweet, local carrots. Blanch carrots first to reduce baking time.

Ingredients:

  • 3 lbs (1.3 kg) new carrots
  • drizzle of olive oil
  • salt and pepper, to taste
  • brown sugar, to taste

Directions:

  1. Line baking sheet with parchment paper, if desired.
  2. Toss carrots with olive oil, salt, and pepper.
  3. Bake at 400°F (204°C) for 30 to 40 minutes, turning once.
  4. Sprinkle with brown sugar five minutes before they’re done.
