Oven-Roasted Carrots in Brown-Sugar Glaze

Ingredients:
- 3 lbs (1.3 kg) new carrots
- drizzle of olive oil
- salt and pepper, to taste
- brown sugar, to taste
Directions:
- Line baking sheet with parchment paper, if desired.
- Toss carrots with olive oil, salt, and pepper.
- Bake at 400°F (204°C) for 30 to 40 minutes, turning once.
- Sprinkle with brown sugar five minutes before they’re done.
