This is a take on a classic French 75. The Cognac is warming while the maple lends a wonderful seasonal flavour.

  • 1 oz (60 ml) Cognac
  • ¼ oz (15 ml) maple syrup
  • ½ oz (30 ml) lemon juice
  • 2 dashes of Angostura aromatic bitters
  • sparkling wine
  • lemon twist


  1. Add all ingredients to shaker tin and shake for 5 seconds.
  2. Strain into chilled champagne glass and top with sparkling wine.
  3. Garnish with lemon twist.
