Tuna and Lime Gelatin

Light tasting, perfect for picnics, this sandwich can be prepared the day before.

Ingredients:

  • 1 package lime gelatin
  • ½ cup boiling water
  • 1 tin of drained white tuna
  • 1 carrot, finely grated
  • 3 green onions, white part only, chopped fine
  • ½ cup whipped salad dressing
  • ½ cup whipping cream

Directions:

  1. In a small bowl, combine gelatin and boiling water. Set aside.
  2. In another bowl, mix tuna, grated carrot, green onion, whipped salad dressing, whipping cream until combined, about two minutes.
  3. Cover with plastic wrap and refrigerate overnight.
  4. To assemble, spread filling on a slice of bread, top with additional bread, remove crusts, and quarter.
