Vanilla Sauce

Sylvia Prince calls this her “Newfie vanilla sauce,” thanks to the addition of Screech, a classic Newfoundland rum. If you can’t find it, use spiced or dark rum.

Ingredients:

  • 1/4 cup (55 g) butter
  • 1/4 cup (110 g) brown sugar
  • 1 Tbsp (15 ml) flour
  • 1 cup (250 ml) milk
  • 2 tsp (10 ml) vanilla
  • 1 Tbsp (15 ml) Screech or other spiced rum
 

Directions:

  1. In a medium saucepan over medium low heat, melt the butter. Add the brown sugar and flour.
  2. Once well incorporated, add the milk, vanilla extract and rum. Stir continuously until the mixture bubbles and thickens.
  3. Remove from heat, allow to cool slightly and serve over pudding.
