Vanilla Sauce
Sylvia Prince calls this her “Newfie vanilla sauce,” thanks to the addition of Screech, a classic Newfoundland rum. If you can’t find it, use spiced or dark rum.
Ingredients:
- 1/4 cup (55 g) butter
- 1/4 cup (110 g) brown sugar
- 1 Tbsp (15 ml) flour
- 1 cup (250 ml) milk
- 2 tsp (10 ml) vanilla
- 1 Tbsp (15 ml) Screech or other spiced rum
Directions:
- In a medium saucepan over medium low heat, melt the butter. Add the brown sugar and flour.
- Once well incorporated, add the milk, vanilla extract and rum. Stir continuously until the mixture bubbles and thickens.
- Remove from heat, allow to cool slightly and serve over pudding.
