Spinach Salad

Ingredients:
For the vinaigrette:- 1/2 cup (125 ml) rice vinegar
- 2 Tbsp (30 ml) honey
- 1 clove garlic, minced
- 1 cup (250 ml) extra-virgin olive oil
- salt, pepper, to taste
- 3 cups (750 ml) baby spinach
- 1/4 cup (60 ml) pickled onion
- 2 apples, honey crisp or royal gala, chopped into matchsticks or cubes
- 2 Tbsp (30 ml) feta cheese, crumbled
- 1 Tbsp (15 ml) sunflower seeds
Directions:
- Stir vinaigrette ingredients together, mixing well.
- Toss all salad ingredients together.
- When ready to serve, mix salad with vinaigrette.
