- 1 lb sturgeon meat, ground
- 1 T cumin seed
- 1 t coriander seed
- 5 whole cloves
- 2 bay leaves
- ¼ t cinnamon
- ½ t oregano
- ½ t thyme
- 1 T granulated garlic
- 1 t salt
- ½ t ground black pepper
- 2 T Ancho chile powder
- 2T duck fat or oil
- In a bowl, combine ground meat with spice.
- Heat frying pan over medium-high heat. Add oil.
- Fry sausage mixture until browned. Set aside.
