Web exclusive: Sturgeon Chorizo


Chef Rich Francis used duck fat to fry up this free-formed sausage, but any oil will do.

  • 1 lb sturgeon meat, ground
  • 1 T cumin seed
  • 1 t coriander seed
  • 5 whole cloves
  • 2 bay leaves
  • ¼ t cinnamon
  • ½ t oregano
  • ½ t thyme
  • 1 T granulated garlic
  • 1 t salt
  • ½ t ground black pepper
  • 2 T Ancho chile powder
  • 2T duck fat or oil


  1. In a bowl, combine ground meat with spice.
  2. Heat frying pan over medium-high heat. Add oil.
  3. Fry sausage mixture until browned. Set aside.
To serve: Cover bottom of shallow bowl with a ladle of Three Sisters Bisque. Top with sturgeon, spring with sausage mixture, and finish with a drizzle of sauce.
